Nine plant-based recipes to warm you up this Autumn (and all year round!)

And for those of you in the Southern Hemisphere or closer to the tropics, don’t worry! These recipes are versatile and can be enjoyed all year round – whatever the season, these delicious and nutritious meals will delight your taste buds.

1. Oriental Pumpkin & Shiitake Soup

This delicious oriental soup has a great texture, with chewy shiitake mushrooms and extra crispy bean sprouts. And if spicy foods aren’t your thing, that’s not a problem – you can always just leave out the curry paste. Find the recipe here.

2. Noodle Soup with Bok Choy

With this quick-and-easy recipe, you’ll have your own noodle soup on the table in no time! Almost as convenient as instant noodles from the supermarket – but way tastier and much healthier – this soup is loaded with fresh vegetables and bamboo shoots. A vegetable broth cube gives the soup its spicy essence but feel free to use your own blend of spices instead. Likewise, the sambal oelek, which adds a little extra zest, can be substituted with some mild sweet-chilli sauce.

Sweet potatoes are a great key ingredient when you want to make a satisfying and hearty soup. The lime, chilli, and carrot in this recipe add a fresh and spicy flavour, while the sweet potatoes are packed with vitamins and minerals such as B6 and magnesium – whose nutritional benefits are optimised by the cooking process.
